The Olivia: Lemon & Honey Gin Cocktail with Amaretto & Olive Oil
Before you ask, yes, you read that correctly. Olive oil.
The Olivia hits you with tart lemon juice boozy gin, but then the sweet notes of honey and amaretto balancing it out. But then there’s that slight hit of olive oil—not as much for flavor but for texture and and a tiny hit of spice.

I suppose it’s somewhere between a Bee’s Knees and a gin amaretto sour, but the olive oil adds something entirely unique.

How to make this lemon amaretto gin drink
If you’re using the egg white (which I STRONGLY recommend), put that in the shaker first and give it a really strong “dry” shake by itself for 15-20 seconds. You can make this without it, but it really does add texture and softness.
Then add the gin, amaretto, lemon juice, honey syrup, and olive oil. Shake for another 15 seconds. THEN, add ice to the shaker and give the mixture another shake for 10-15 seconds (to cool it down, mostly, plus a little more emulsifying and getting a really good foam).

Strain into a large coupe glass and serve. Garnish with a dehydrated lemon slice if desired.

The Olivia: Lemon Amaretto Gin Cocktail with Olive Oil
Ingredients
- 2 ounces of London Dry gin I use Fords Gin
- 3/4 ounce of amaretto I prefer Disaronno; I actually use 1 oz, but may be sweet for you
- 3/4 ounce of fresh lemon juice
- 3/4 ounce of honey simple syrup 1:1 ratio honey to water
- 1/2 ounce of olive oil
- 1 egg white
Instructions

- Then add the gin, amaretto, lemon juice, honey syrup, and olive oil. Shake for another 15 seconds.
- THEN, add ice to the shaker and give the mixture another shake for 10-15 seconds (to cool it down, mostly, plus a little more emulsifying and getting a really good foam).
- Taste to make sure it’s balanced to your personal taste. You can always add a little more of anything to get it there.
- Strain into a large coupe glass and serve. Garnish with a dehydrated lemon slice if desired.
