The Olivia: Lemon Amaretto Gin Cocktail with Olive Oil

The Olivia is an easy but unique gin cocktail...similar to a Bee's Knees, with the sweeter honey and amaretto balancing out tart lemon juice. It's got a slight hit of olive oil, not as much for flavor but for texture and balance. The result is an interesting, delicious, super easy gin cocktail that's perfect for any occasion!

Ingredients

  • 2 ounces of London Dry gin I use Fords Gin
  • 3/4 ounce of amaretto I prefer Disaronno; I actually use 1 oz, but may be sweet for you
  • 3/4 ounce of fresh lemon juice
  • 3/4 ounce of honey simple syrup 1:1 ratio honey to water
  • 1/2 ounce of olive oil
  • 1 egg white

Instructions

  • If you're using the egg white (which I STRONGLY recommend), put that in the shaker first and give it a really strong "dry" shake by itself for 15-20 seconds.  You can make this without it, but it really does add texture and softness.
  • Then add the gin, amaretto, lemon juice, honey syrup, and olive oil. Shake for another 15 seconds.
  • THEN, add ice to the shaker and give the mixture another shake for 10-15 seconds (to cool it down, mostly, plus a little more emulsifying and getting a really good foam).
  • Taste to make sure it's balanced to your personal taste. You can always add a little more of anything to get it there.
  • Strain into a large coupe glass and serve. Garnish with a dehydrated lemon slice if desired.
