Easy High-Protein Mongolian Beef Bowls

Y’all know I love me a “bowl”. Endless variety, easy meal prep. And this high-protein Mongolian beef bowl recipe is one of the simplest and easiest I’ve found.

This is a healthier high-protein and slightly healthier version of the delicious but kind-of-terrible-for-you American Chinese dish we all know and love. It’s high-protein in that it’s basically just…beef with some sauce. I pair mine with an easy jasmine rice and some veggies, but if you need it to be low-carb in addition to high-protein, swap the rice for cauliflower rice or quinoa.

I like to garnish mine with some green onions and sesame seeds, and some roasted red peppers for color…though you could go traditional and add some roasted onions and broccoli for additional veggies.

I do have a yummy and indulgent “regular” recipe for Mongolian beef (that’s still definitely not terrible for you, and is way better than the restaurant kind), if you’re interested. It’s also a super fast 30-minute meal just like this one.

Healthy Mongolian beef bowls in 15 minutes

Cook the ground beef until there is no more pink, adding about a teaspoon of salt. While it’s cooking, combine all the sauce ingredients in a small bowl. I recommend you stir the arrowroot powder into the hot water before adding it to the bowl, this will make it easier to dissolve without clumps.

Once the beef is fully cooked, pour the liquid mixture into the pan and stir. It should immediately bubble and start to thicken. Cook for 1-2 minutes, stirring consistently, until the mixture thickens absorbs slightly, so there’s not liquid but instead a nice thick sauce.

Serve over rice and garnish with green onions and sesame seeds.
