When I started looking for easy keto bread recipes, just to have a vehicle for my almond butter, I had trouble finding one that sounded good. A lot had cream cheese (not my thing, nor do I keep it around the house), or weird ingredients (lookin’ at you psyllium husk), or were overly complex. And then I found this gem.
Technically I guess it should be called like…5-minute keto bread since you have to get the ingredients out and stir them together. The 90 seconds is just the cooking time. But still.

Whisk the egg, milk, oil, coconut flour, nut flour, baking powder, and salt together in a small bowl. Stir in any optional add-ins as well.
Pour into a tall microwave-safe mug (ideally more of a flat bottom) and tap the bottom firmly on the counter a few times to force any air bubbles to rise and pop.
Microwave on high for 90 seconds (1 minute, 30 seconds).
Invert mug onto a cutting board and let the bread slide out. It’s really hot so I let it cool for a minute, then cut into 1/2-inch-thick slices (makes 3 slices for me).
To toast (which I recommend), heat a little oil in a small skillet over medium-high heat until shimmering. Add the slices and toast until golden-brown, about 30 seconds per side.
Eat right away, by themselves or topped with delicious things. Jam or honey if it’s not against your diet. For me right now (SIGH) it’s just almond butter…which is still good, it’s just not jam.
