90-Second Keto "Bread" (No/Low Carb)

This easy 90-second keto bread is ready in just a few minutes and is a great little treat if you're on keto or just have to avoid carbs for other reasons...toast it up, top with nut butter, and enjoy!

Ingredients

  • 1 large egg
  • 1 tablespoon of milk of your choice
  • 1 tablespoon of olive oil
  • 1 tablespoon of coconut flour
  • 1 tablespoon of almond or hazelnut flour
  • 1/4 teaspoon of baking powder
  • Pinch of salt
  • Optional: cinnamon or cacao powder for a sweeter-type flavor; shredded cheese scallions, herbs for savory

Instructions

  • Whisk the egg, milk, oil, coconut flour, nut flour, baking powder, and salt together in a small bowl. Stir in any optional add-ins as well.
  • Pour into a tall microwave-safe mug (ideally more of a square bottom) and tap the bottom firmly on the counter a few times to force any air bubbles to rise and pop.
  • Microwave on high for 1 minute, 30 seconds.
  • Invert mug onto a cutting board and let the bread slide out.  It's really hot so I let it cool for a minute, then cut into 1/2-inch-thick slices.
  • To toast (which I highly recommend), heat a little oil in a small skillet over medium-high heat until shimmering. Add the slices and toast until golden-brown, about 30 seconds per side.
