Rosemary Simple Syrup For Cocktails

Friends, we are now venturing into a new realm of foodie-ism.  The world where we think of delicious flavors to add to cocktails and then MAKE IT HAPPEN.  

Not a bad world, amirite???

Easy Homemade Rosemary Simple Syrup | this rosemary simple syrup makes a great addition to many cocktails, from a rosemary old fashioned to sprucing up a gin & tonic.  And you can add it to baked goods as well!

Ever since moving to Louisville for my new job and working on spirit brands like Woodford Reserve, Tequila Herradura, and Old Forester, I’ve been introduced to a much wider world of awesome cocktails…new flavors, types of ingredients, ways of preparing, and so much more. 

I’m fascinated by all the new combinations that are out there.  And now that I’ve dipped my toe in by making old fashioneds at home (using pre-made syrup that’s amazing), I feel like I can try and branch out more on my own. 

So when I saw this recipe for rosemary simple syrup, I was intrigued.  I happened to have some rosemary sitting in my fridge, so on a whim I got up off the couch and put the saucepan on the stove. 

And five minutes later (plus 20 minutes of steeping on its own), I had my own homemade rosemary simple syrup.  I felt like a magician.

This is so simple (haha, syrup) that it’s almost not a recipe.  You heat up the water (stirring) until the sugar dissolves and bring it to a very initial gentle boil (not super boil), then remove it from the heat. 

Throw your rosemary sprig (whole) in, and let it sit for 15-20 minutes as it cools.  You can go back to the couch at this point, it does everything else on its own.

Et voila!  Remove the rosemary and pour the syrup into a container, then refrigerate.  I had bought these cute little bottles on Amazon to hold old fashioned syrup I bought in bulk, so they were perfect for holding this syrup as well.  It filled up just a little over two of the bottles.

I’ve been experimenting with the syrup in different ways, because it’s super versatile. 

I’ve added it to my gin & tonics to give a slightly different botanical twist, added a bit to my whole wheat pear cake icing to add some herbal flavor, and made absolutely DELICIOUS fizzy rosemary gin gimlets.  It should last in your fridge for a few months if it’s sealed.

  • Cinnamon-Vanilla Simple Syrup
  • Basil Simple Syrup
  • Strawberry Mint Syrup
  • Easy Spiced Pear Simple Syrup

Rosemary Simple Syrup

  • 1 cup of water
  • 1 cup of granulated sugar
  • 1 sprig of rosemary
  1. Heat up the water, stirring until the sugar dissolves, and bring to an initial gentle boil.
  2. Once it reaches the early gentle boil, remove it from the heat and add the rosemary sprig (whole).  Let it sit for 15-20 minutes as it cools.
  3. Remove the rosemary and pour into a container, then refrigerate.

Anyone who knows me know that travel + pastries is Anyone who knows me know that travel + pastries is one of my favorite combos. So when I was in Finland a couple months ago, I obvs couldn't resist eating an insane amount of their traditional cinnamon buns (called korvapuusti, or "little ear buns"). 

And a few days after I got home, I needed some comfort food, so decided to recreate them for myself...these Finnish cinnamon rolls are heavily spiced with cardamom, chewier and denser, and super easy to make!

It's a winter-y version of a whiskey sour bringing both cinnamon and sage, and then skirting the line of daiquiri with the substitution of lime juice for the traditional lemon.
