Don’t be daunted by the 30-minute time on this spiced pear syrup, it’s entirely hands-off…something you can have on the stove while you make dinner or putter around with chores.

This is the star in a simple spiced pear bourbon cocktail, and plays an amazing supporting role in an amaretto spiced pear gin sour.  It’s incredibly versatile, and I’d even play around with it in baked good glazes.

Add the water, pears, sugar, and cinnamon sticks to a medium sauce pan over medium-low heat. Stir gently until the sugar has completely dissolved.

Have the mixture GENTLY simmer for about 25 minutes.  Then turn the heat to low, and simmer another five minutes.

I’ll be honest, there is no burner on my insane stove that gently simmers anything, so I just found the least intense burner and put it on the lowest setting, for a total of 30 minutes.

Strain the syrup into a glass measuring cup, and discard the pears and cinnamon sticks.

Then strain the syrup a second time into a glass bottle that tightly seals.  The original recipe says you can refrigerate up to two weeks; I’ve had mine for a couple months and it’s still okay but always keep an eye out for mold.

This spiced pear syrup is just begging to be paired with bourbon, goes great with gin, and I’m sure would be lovely with rum or tequila (I just don’t tend to have those around).  Whip up a batch and just keep it around for when inspiration strikes!

  • 1/4 cup + 2 tablespoons of granulated sugar
  • 2 cinnamon sticks
  • Splash of vanilla extract

Instructions

  1. Add the water, pears, sugar, and cinnamon sticks to a medium sauce pan over medium-low heat. Stir gently until the sugar has completely dissolved.

  3. Then turn the heat to low, and simmer another five minutes.
  4. Remove from the heat, add the vanilla extract, and allow to cool for 15 minutes.

Notes

The original recipe calls for comice pears, which I can't find, so I used Bartlett. You want them nice and ripe and juicy, to get the flavor you need for the syrup.
