Double Chocolate Peanut Butter Mug Cake

Oh boy, I’ve been wanting to try this chocolate peanut butter mug cake for quite a while, but the universe kept conspiring against me.

Mostly by making me too full after my traditional Saturday night Thai food to even think about dessert. I know, life’s rough.

But after our eventful snow day in Atlanta yesterday, I decided it was time for a treat.  Yet again, I didn’t prepare for the snowpocalypse. And by “snowpocalypse”, I mean 1-2 inches of snow that literally ruined Atlanta.  People stranded in their cars for 20+ hours, having to abandon them on the highway and walk to safety and warmth.  

Parts of it enforced my lack of faith in humanity (yes, I’m looking at you, asshat who knowingly ran the red light and blocked a major intersection for 20 minutes), while others were pretty amazing (thousands of people offering up spare rooms, couches, bringing food to stranded drivers).

My 90-minute drive home (vs. 20 usually) looked like a walk in the park by comparison, and while I don’t have much food at home, I do have wine and I can make this amazing mug cake.

Double Chocolate Peanut Butter Mug Cake bite

Mug cake recipes are hit-and-miss, but this one was a winner for me. First, you can never miss with (double) chocolate and peanut butter, and the texture was fudgy and creamy and awesome. The fact that it doesn’t use eggs is handy as well.

It helps to start with a super cute mug. This is one of my favorites, it actually was the first mug in my somewhat-eclectic collection. Got it in Seattle at Pike’s Place Market back in college.

Stir together the flour, sugar, cocoa, baking powder, and a pinch of salt. I sprayed my mug with a little bit of cooking spray first.

Add the milk and oil, and stir everything together to form batter.

Drop the peanut butter in the middle and press down slightly to try and sink it (it won’t sink all the way).

I threw a few large dark chocolate chips on top too, to give it a lava cake-like chocolate texture.

Microwave for a minute (that’s what worked in my microwave, in any case).

Double Chocolate Peanut Butter Mug Cake milk

Devour with some cold milk, or whipped cream or ice cream if you’re feeling particularly indulgent.

Double Chocolate Peanut Butter Mug Cake

  • 3 tablespoons of flour
  • 3 tablespoons of sugar
  • 1 1/2 tablespoons of cocoa powder
  • 3 tablespoons of milk
  • 1 1/2 tablespoons of vegetable oil
  • 1/4 teaspoon of baking powder
  • Pinch of salt
  • 1 tablespoon of creamy peanut butter
  • 1 small handful of dark chocolate chips

I sprayed my mug with a little cooking spray first.

Stir together the flour, sugar, cocoa powder, baking powder and salt in the mug. Add the milk and vegetable oil, stir until it creates a smooth batter.

Drop the peanut butter on top of mixture and gently push into the center (it will still be exposed on the top). Sprinkle the dark chocolate chips on top, in the middle with the peanut butter.

Cook in the microwave for approximately 1 minute (in my microwave at least).

This cranberry snack cake is seriously my platonic This cranberry snack cake is seriously my platonic ideal for a cake. I DREAM of this cake. A soft, moist, dense buttery vanilla cake batter is studded with tart fresh cranberries, with a tiny crunch of raw sugar on top. A perfect dessert or snack for pretty much any occasion...including with a cup of tea on a random Tuesday afternoon...

These super easy marinated white beans are packed These super easy marinated white beans are packed with flavor & only take a few minutes to make! Even better?? They're best when made ahead of time (in 5 minutes!) and left for a day or two in the fridge for the flavors to really meld & intensify. 

This has become a go-to plant-based recipe, but I often throw some grilled salmon or chicken on top for a full meal.

I'm not generally a soup person, though I'm trying I'm not generally a soup person, though I'm trying to be more 🍜 But this Turkish corba (a spiced red lentil soup) has always been one of my exceptions.  It's CRAZY easy to make, full of veggies and the protein from the lentils, and just feels like a warm hug in a bowl!  A great vegetarian dinner idea, perfect on any detox protocol, and just a great cozy recipe for the winter months.
