Five-Minute Entree (Garlic Brown Sugar Chicken)

I think I maybe ate too much chicken in college or something. Because chicken? It’s not my thing.

Almost none of my regular recipes include chicken. Actually, many of them don’t include any meat at all because I’m lazy and cheap and hate dealing with raw meat. But let’s be honest—sometimes you have to make a meat dish, and you have to make it quickly.

And kittens? This is it. Full disclosure, the five minutes is actual hands-on time, it’ll need to bake for 15-30 minutes.

Start your ovens (500 degrees)…

Saute the olive oil and garlic for a couple minutes.

Remove from heat and stir in the brown sugar.

Place the chicken breasts in the pan. The recipe calls for regular boneless, skinless chicken breasts, but I used thinner tenders. However, they got kind of tough, and I’d recommend using the regular plumper breasts next time.

Spread the brown sugar/garlic/olive oil mixture on all the chicken breasts.

If there’s oil left over, pour it around the edges. Bake at 500 for 15-30 minutes. Mine was done in the 15-20 range, but if I’d used regular chicken breasts it would have been closer to 30.

Was the easiest, least stressful chicken dish I think I’ve ever made. Usually I’m all stressed out about making sure chicken is cooked all the way through so I don’t inadvertently give someone (or myself) salmonella. But these were done the first time I checked. Got a super thumbs up from a guy too, so the sugar doesn’t make it to “frou frou”. I served this with a delicious cauliflower leek risotto and some sauteed kale and they went great together, the flavors didn’t fight. We were super stuffed afterward.

Garlic Brown Sugar Chicken

  • 4 boneless skinless chicken breasts
  • 4 garlic cloves, minced
  • 4 tablespoons brown sugar
  • 3 teaspoons olive oil

Preheat oven to 500°F and lightly grease a casserole dish (or put down aluminum foil). In small sauté pan, sauté garlic with the oil until tender. Remove from heat and stir in brown sugar. Place chicken breasts in a prepared baking dish and cover with the garlic and brown sugar mixture. Add salt and pepper to taste. Bake uncovered for 15-30 minutes.

    • Thanks! I bet it would be great (and cheaper) with bone-in chicken. I am one of those weird (and let’s face it, lazy) people who have never figured out how to get chicken off the bone well…don’t like working too hard for my food! 🙂 But it would be a great alternative.
