5-Minute Healthy Breakfast Tacos

These healthy breakfast tacos have been giving me *life* the past several days!

I’ve been on a bit of a “detox” the last couple weeks, nothing super extreme but the kind where you tell yourself you need to LOCK. IT. UP.  I’ve been focused on eating simple, unprocessed foods as much as possible, lots of fruit and veg, largely staying away from alcohol…you know the drill.

And these easy breakfast tacos have been playing a big role in enabling my “being good”.  I can be on a conference call, taking notes and speaking up, and still whip these babies up in 5 minutes.  They’re a great fast lunch when on the go.

I also love how simple they are, yet how satisfying they are…I don’t feel cheated in any way, and I’m full for hours.  If you’re gluten-free, these easy soft GF flour tortillas would be a great base for these tacos.

They’re also really versatile, so you can get as creative as you’d like with extra toppings or seasonings.  Even calling this a “recipe” feels like it’s overstating things a bit—they’re that easy.  

If you’re timing this, here goes…

Heat a small skillet on medium.  As it heats, warm the tortillas briefly on both sides, then remove to your plate.

I use 2 eggs for 2 tacos to up the protein

Beat the eggs in a small bowl, then pour in your hot skillet.  You may need a tiny bit of oil or butter based on your skillet. 

Add the seasonings and stir quickly to scramble the eggs.  Cook for about 2 minutes, or until the scrambled eggs are the consistency you prefer (for me, that’s a little softer and runnier).

Split between the two tortillas.  Top with a bit of cheese and the diced avocado.

Add a bit of hot sauce (or ketchup in my case).  Or leave it plain.  Or throw other random toppings on there.

These 5-minute breakfast tacos are versatile, easy, filling, and healthy...perfect as a meal or snack any time of the day.

Ingredients

  • 2 small whole wheat tortillas ("street taco" size)
  • 2 eggs
  • Seasonings (I mix it up a lot but seasoned salt and pepper are a good starting place)
  • A sprinkle of shredded sharp cheddar (cotija cheese is good too)
  • 1/2 avocado, diced
  • Hot sauce, ketchup, or other sauce of your choice
  • Any other toppings you'd like

Instructions

  4. Split between the two tortillas.  Top with a bit of cheese and the diced avocado.  Add a bit of hot sauce (or ketchup in my case). Devour.

Notes

    • This is very much a "choose your own adventure" thing, so make it your own. Try different cheese, throw on some fresh herbs, try out some extra veggies. I also mix up the spices sometimes...everything bagel seasoning, red pepper flakes, and so much more.
    • It goes without saying that you can scale this up or down.
