Super Healthy Orange Honey Spice Granola

This delicious, fragrant orange honey spice granola is practically a superfood! It's high in protein and fiber, packed with nutrients, low in sugar, and SO easy to make.

Ingredients

  • 2 cups of organic rolled oats certified GF if desired
  • 1/2 cup of sliced almonds or cashew pieces
  • 1/4 cup of dry white quinoa can sub sesame seeds if you don't have
  • 1/4 cup of pumpkin seeds
  • 1 Tbsps of chia seeds
  • 1/4 cup of ground flaxmeal
  • 1/4 cup of golden raisins
  • Zest of 1 medium navel orange
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of cardamom
  • 1/8 teaspoon of ground allspice
  • 1/8 teaspoon of ground ginger
  • 1/2 teaspoon of fine sea salt
  • Optional but I love it: 1 teaspoon of large sea salt crystals
  • 1/3 cup of organic raw honey
  • 3 tablespoons of extra virgin olive oil
  • Juice of 1 medium navel orange
  • 1/4 cup of runny tahini
  • 1 teaspoon of vanilla extract

Instructions

  • Preheat the oven to 300 F and line a large sheet pan with parchment paper.
  • In a large mixing bowl, stir together the dry ingredients.  Then add the wet ingredients and combine, making sure everything gets coated.
  • Spread the mixture evenly on the prepared baking sheet and bake for 25 minutes or so.  Don't touch or stir it at all, or you won't  get good clusters!  Keep an eye on it after about 20 minutes, as it can start to catch and burn a bit.  You want it to be nice and golden and fragrant, beginning to dry out.  It will still feel a bit wet or soft, but will harden as it dries.
  • Let it cool completely, then break up into clusters and store in an airtight container or ziploc for 1-2 weeks.
