Lemon-Dijon Roasted Carrots with Feta

These roasted carrots come with a delicious tangy sauce and salty feta crumbles, a super easy but fancy-feeling side dish. This recipe is incredibly flexible so consider the amounts suggestions but scale and adjust to your tastes.

Ingredients

  • Carrots 3-4 large carrots
  • Olive oil salt, pepper, garlic powder
  • 2 tablespoons of dijon mustard
  • 1 tablespoon of lemon juice
  • 1 tablespoon of maple syrup
  • Fresh or dried dill
  • Feta cheese crumbles

Instructions

  • Cut the carrots into thin matchsticks or bite-size pieces (totally up to you). Spritz with olive oil and sprinkle salt, pepper, and garlic powder.
  • Either preheat your oven to 425 F and roast the carrots for 15-25 minutes (depending on the thickness), or preheat your air fryer to 400 F and roast for 7-10 minutes.
  • While the carrots are roasting, whisk together the mustard, lemon juice, maple syrup, and dill. Season with a bit of salt and garlic powder and taste, adjusting the ingredients as needed.
  • When the carrots are good and roasty, drizzle with the sauce and add feta crumbles.

The amounts are super flexible so start with the amount of carrots you want to make, and then scale from there.
