5-Minute Healthy Breakfast Tacos

These 5-minute breakfast tacos are versatile, easy, filling, and healthy...perfect as a meal or snack any time of the day.

Ingredients

  • 2 small whole wheat tortillas "street taco" size
  • 2 eggs
  • Seasonings I mix it up a lot but seasoned salt and pepper are a good starting place
  • A sprinkle of shredded sharp cheddar cotija cheese is good too
  • 1/2 avocado diced
  • Hot sauce ketchup, or other sauce of your choice
  • Any other toppings you'd like

Instructions

  • Heat a small skillet on medium.  As it heats, warm the tortillas briefly on both sides, then remove to your plate.
  • Beat the eggs in a small bowl, then pour in your hot skillet.  You may need a tiny bit of oil or butter based on your skillet. 
  • Add the seasonings and stir quickly to scramble the eggs.  Cook for about 2 minutes, or until the scrambled eggs are the consistency you prefer (for me, that's a little softer and runnier).
  • Split between the two tortillas.  Top with a bit of cheese and the diced avocado.  Add a bit of hot sauce (or ketchup in my case). Devour.

Notes

    • This is very much a "choose your own adventure" thing, so make it your own. Try different cheese, throw on some fresh herbs, try out some extra veggies. I also mix up the spices sometimes...everything bagel seasoning, red pepper flakes, and so much more.
    • It goes without saying that you can scale this up or down.
