Traditional Spanish Tortilla

Once upon a time I would have called this a frittata, and I would have been wrong.  One of my co-workers is half Spanish, and for breakfast one time he brought in a traditional Spanish tortilla. While it looked exactly like the frittatas I’m so fond of, it had a few notable differences and I knew I wanted to recreate it myself.

Spanish tortillas and frittatas are very similar, though there are a few differences. Tortillas are always egg- and potato-based, while frittatas only have to have eggs.

Also, apparently the main difference is that you’re supposed to flip a Spanish tortilla on the stovetop at the end, versus finishing in the oven like a frittata. I’ll definitely be trying this method next time—I’m trying to wheedle my co-worker’s recipe out of him!

The gold potatoes are delightfully tender and add a delicate base to the dish along with the onion (this Kitchn article speaks to the technique that gets them lovely and soft).

Many also include asparagus, chorizo, and other fillings, but this one is very simple and traditional.  The recipe below called for tarragon, though I used fresh rosemary and oregano instead.

Traditional Spanish Tortilla recipe

Heat the oven to 450 F.

Cut the potatoes in half and slice in VERY thin half moons.  Thinly slice the onion as well.

Heat the oil in a 10-inch oven-safe skillet over medium heat, I used cast iron. Add the potatoes and onion, cover and cook for 10 minutes, stirring occasionally so they don’t burn.

Add the garlic and cook five minutes more, until potatoes are soft but not browned.

Beat the eggs in a large bowl and add the herbs, salt, and pepper, then pour into the pan.

Let the mixture settle a bit on the bottom, then gently run a silicone spatula around the edge of the pan to release the tortilla from the sides.

Cook until the bottom is set and the sides begin to set—about 8 minutes.

Then place the pan in the oven.  You’ll have to watch carefully, you want it just barely cooked, the surface dry but not brown. Otherwise your eggs get rubbery. Start checking after about 5 minutes.

Remove from oven and let cool.

Slice and serve—the Spanish tortilla is great hot and fresh, or at room temperature. You can store for four or five days in the refrigerator. It makes a great breakfast at work!

  • 1/4 cup of extra-virgin olive oil
  • 8 large eggs
  • 1 clove of garlic
  • 1/2 cup flat leaf parsley, finely chopped (I omitted)
  • 1 teaspoon of finely chopped fresh tarragon (I substituted rosemary & oregano)
  • 1 teaspoon of fine sea salt
  • Fresh ground pepper

A soft, moist, dense buttery vanilla cake batter is studded with tart fresh cranberries, with a tiny crunch of raw sugar on top. These super easy marinated white beans are packed These super easy marinated white beans are packed with flavor & only take a few minutes to make! Even better?? They're best when made ahead of time (in 5 minutes!) and left for a day or two in the fridge for the flavors to really meld & intensify. 

This has become a go-to plant-based recipe, but I often throw some grilled salmon or chicken on top for a full meal.

I'm not generally a soup person, though I'm trying I'm not generally a soup person, though I'm trying to be more 🍜 But this Turkish corba (a spiced red lentil soup) has always been one of my exceptions.  It's CRAZY easy to make, full of veggies and the protein from the lentils, and just feels like a warm hug in a bowl!  A great vegetarian dinner idea, perfect on any detox protocol, and just a great cozy recipe for the winter months.
